Red Rice with Smoked Salmon
Tidbits.. Red rice has a rather long cook time (approxiately 35 - 40 minutes) It is delicious with a fantastic aroma and nutty flavour.
Ingredients
- Red Rice - 350 g
- Vegetable broth - 1 liter
- Smoked salmon - 120 g in thin slices
- Date tomatoes - 8
- Black olives - 125 g
- Capers - 2 T
- Fresh herbs, parsley, thyme, chives - 3 T
- Freshly ground black pepper - to taste
- Extra Virgin Olive Oil - to taste
- Fresh squeezed lemon juice - to taste
Instructions
- . Cook rice adding hot broth as needed one ladle at a time until rice is done (follow package directions)
- . Press rice into molds while warm and put on serving plates. Place salmon, date tomatoes, capers and olives overtop.
