Red Lentil Soup with Cotechino (New Year's Eve)
Tidbits...On New Year's Eve it is a tradition to eat lentils and cotechino. I served these red lentils in a crispy cheese bowl.
Ingredients
- Red Lentils - 1 1/2 cups dried
- White onions - 2 chopped
- Butter - 3 T
- Thyme - 1 sprig fresh or 1/2 tsp. dried
- Vegetable broth - 6 cups
- Cotechino (Mini) of Modena - 1
Instructions
- Brown onion in butter for 5 minutes, add dried lentils and toss to coat.
- Add broth and cook uncovered for 30 minutes.
- Salt and pepper to taste.
- Boil water and cook package of cotechino.
- Open and drain then slice and layer one or two slices on top of each bowl of soup.
