Pork Filet with Braised Fennel and Parmesan
Tidbits...The slow cooking with braised fennel make this filet succulent, tender and savory topped with the freshly grated parmesan.
Ingredients
- Pork Filet - 1
- Fennel - 1 bulb
- Butter - 1 T
- Bourbon - 1/2 cup
- Parmesan - 1/2 cup
- Green peppercorns - 1 T
- Salt - To taste
Instructions
- In skillet melt butter over high until it begins to bubble Quickly brown filet on both sides then lower heat to medium.
- Add bourbon and after 5 minutes add sliced fennel, peppercorns and a light sprinkle of salt.
- Cover pan for 15 minutes then remove cover and let liquid reduce. Do not let it dry out, add 1/4 cup of water if needed.
Grate parmesan over filet, turn off heat, cover and let rest for 10 minutes. Serve warm.
