Pinwheel Cookies
Tidbits... These delightful melt in your mouth cookies will surely impress your family or guests. You can bake a small batch and return the dough to the refrigerator for later use if desired. You can even cut off a few for a warm breakfast treat with your coffee.
Ingredients
- Butter - 1 1/4 cups butter
- Powdered Sugar - 1 1/2 cups
- Vanilla - 1/2 tsp.
- Egg - 1 large
- Flour - 3 cups
- Dark cocoa powder - 1/4 cup
Instructions
- Cream butter and sugar until creamy then add egg and vanilla and blend well.
- Whisk flour and salt in a 2nd bowl and add gradually to cream mixture either by hand or with a mixer at low speed.
- Divide dough into 2 equal parts. Roll one part into ball and wrap in saran. Mix 1/4 cup cocoa into the other half of dough and roll into a ball and wrap in saran.
- Refrigerate for at least 1 hour.
- Roll out each ball into a rectangle. Place one on top of the other and tightly roll out jelly roll fashion then wrap log in saran.
- Refrigerate 4-6 hours or overnight.
- Preheat oven to 375˚F. Remove dough from refrigerator and cut into 1/4 thick discs. Place on parchment lined baking pan and bake for 7-9 minutes until bottoms are golden.
