Pear Almond Pizza
Tidbits...Ripe pears and dried fruit make this a flavorful delicious dessert. The almond crust adds a crunchy base. It can be served alone or with Vanilla Ice Cream.
Ingredients
- Filling
- Bartlett pears - 1 pound, peeled, sliced
- Cranberries or Raisins - 1/2 cup
- Orange juice - 1 orange
- Limoncello - 4 T
- Pine Nuts - 1/4 cup
- Almonds - 1/4 cup slivered
- Almond Crust
- Flour - 300 g
- Crushed almonds - 75 g
- Butter - 250 g cold cut in small pieces
- Eggs - 2
- Cinnamon - 1 Tsp.
- Cloves - pinch
- Dry yeast - 1 pkg.
- Lemon - 1 rind grated
Instructions
- Soak dried cranberries in 2 Tbl. orange juice 1 Tbl. liqueur and set aside
- Peel, core and slice pears and let marinate in remaining orange juice and liqueur for l hour then combine pears with cranberries.
- Cut butter into dry ingredients. Add lightly beaten eggs and grated lemon. Knead until well blended. Wrap in saran and let rest for at least 1 hour. Roll out on lightly floured surface.
- Arrange pears and cranberries over crust. Sprinkle almonds and pine nuts over top.
- Bake in pre-heated 375˚ oven 30 to 45 minutes until crust is cooked and pears are golden brown. May be served warm or at room temperature.
