Peanut Butter
Tidbits...Peanut butter is almost an American obsession and I was surprised when I moved here to have difficulty finding it on the grocery shelves. I found it in specialty shops and now am finding it more diffused though it is still rarely used. ( Nutella is probably the Italian equivalent obsession). In baked goods I do not notice much difference in the peanut butter that I use, but the taste of this homemade peanut butter is far superior to jars found at the market.
Ingredients
- Roasted Peanuts - 100 g
- Peanut oil - 2 T
- Honey - 2 T
- Coarse Salt - Pinch
Instructions
- Lay peanuts on large baking sheet and roast at 350˚ for 15 minutes. Shake pan so they roast evenly.
- Put roasted peanuts in food processor with honey and salt. Keep pulsing until they become powdery. Drizzle oil a little at a time. If needed add another tablespoon oil. Keep scraping down sides until mixture is smooth and creamy.
- Keep in jar in refrigerator and bring to room temperature as needed.
