Papacelle peppers with basmati and long grain wild rice
Tidbits...Papacelle peppers are sweeter and more tender than bell peppers. They are smaller, round and bake beautifully!
Ingredients
- Papacelle Peppers - 8
- Brown Basmati Rice - 1 cup
- Long Grain Wild Rice - 1/2 cup
- Red onion - 1/2
- Buillion - 1 cube
- Parmesan cheese - 1/2 cup
- Olive oil - to taste
Instructions
Saute chopped onion in 1 Tbl. olive oil.
Cook rice according to package directions.Toss raw rice in oil until well coated then add hot broth a little at a time until rice is slightly undercooked.
Cut tops off peppers and remove interior membrane and seeds.
Mix rice and grated parmesan then stuff peppers. Lay peppers in baking dish on a thin bed of rice mixture and drizzle with olive oil. Top with more grated cheese.
Bake at 375˚ for 30 minutes
