Orecchiette with Spinach and Beans
Tidbits...Be courageous with the red pepper. It really makes a difference.
Ingredients
- Orecchiette - 200 g
- Spinach - 1 cup chopped
- Barlotti Beans Pre-Cooked - 70 g
- Extra Virgin Olive Oil - 3 T
- Salt - To taste
- Hot pepper flakes - 2 tsp.
- Salami - 1/2 cup slivered
- Grated parmesan - 1/4 cup
Instructions
1. Cook pasta in lightly salted water until al dente slightly less than package directions.
2. Drain and reserve 1 cup of cooking water.
3. In a large skillet put in olive oil and turn to medium high. Add spinach and hot pepper flakes. Salt to taste.
4. Turn heat to high and add the cooked pasta. If dry, add a bit of the reserved cooking water. Add the slivered salami and freshly grated cheese. Serve hot.
