Mussels with quinoa
Tidbits...Quinoa is a healthy whole grain high in protein and contains all 9 essential amino acids. Combined with mussels and broccoli this dish is full of flavor and good for you too.
Ingredients
- Quinoa - 250 g
- Mussels (in shells) - 1 kg
- Fish Broth - 1 cup
- Broccoli (florets only) - 1 head
- White wine - 1 cup
- Olive oil - 1/4 cup
- Sea salt
Instructions
- Rinse and cook quinoa according to package instructions. Use fish broth or fish buillion instead of water for more flavor.
- Steam broccoli florets in lightly salted water just until tender. Drain and set aside.
- Put 1 Tbl. olive oil, sprinkling of seasalt and washed mussels in large saute pan. Add cup of white wine cover and cook on high until they open. Reduce heat and let wine reduce. Discard any unopened mussels.
- Toss remaining olive oil and broccoli florets into cooked quinoa. Spoon mussels over top and serve warm or at room temperature.
