International Day of the Woman - Mimosa, Cauliflower, Eggs and Asparagus

March 8th is the International Day of the Woman. "A promise is a promise: Time for action to end violence against women." The symbol is the beautiful Mimosa flower. This recipe is dedicated to all of the beautiful women of the world! On this day events are held worldwide to inspire women and celebrate achievements. Make a difference - think globally and act locally. Do even a small gesture of solidarity to ensure that the future is bright, equal, safe and rewarding for all women.
Ingredients
- Eggs - 4 boiled
- Asparagus spears - 4
- Mayonnaise - 1 T
- Greek yogurt - 1 T
- Salt - to taste
Instructions
- Boil eggs for 8 minutes
- Clean asparagus and eliminate the tough part of the stem then steam until tender but not mushy.
- Chop them finely but leave the four “heads” intact for decoration.
- Mix the chopped asparagus (cooled) with the yogurt and mayonnaise and add salt.
- Remove shells, rinse and cut the eggs in half lengthwise. Delicately remove yolks.
- Fill the egg whites with the asparagus mixture.
- Chop the yolks and sprinkle over the top and decorate with the spears.
