Mayonnaise Traditional & Quickie
Tidbits...Both of these versions can be kept for 2 or 3 days covered with saran wrap and refrigerated. It is fundamental that all ingredients are at room temperature for the best result.
Ingredients
- Traditional
- Eggs - 2 yolks
- Seed oil - 1 cup
- Lemon - 2 tsp.
- Salt and White Pepper
- Quickie
- Eggs - 2 yolks
- Seed oil - 1 cup
- Dry Mustard - 1 Tsp.
- White Vinegar - ! Tbl.
Instructions
Traditional
- Beat yolks with lemon salt and pepper. Continue beating while adding oil a few drops at a time until absorbed.
Quickie
- With a hand blender beat yolks, white vinegar, mustard, salt and pepper until blended then in a fine stream add oil until completely absorbed.
