Kumquat Plumcake
Tidbits...Kumquats are a sour fruit, even when ripe. They are very flavorful in this moist plumcake.
Ingredients
- Flour - 2 cups
- Baking powder - 1 1/2 tsp.
- Baking soda - 1/2 tsp.
- Salt - 1/2 tsp.
- Sugar - 3/4 cup
- Milk - 2/3 cup
- Eggs - 2
- Kumquats - 3/4 cup pureed
- Butter - 2 T
- Walnuts - 3/4 cup
Instructions
- Put dry ingredients in large bowl and whisk to blend.
- Cut kumquats in slices and remove seeds.
- Put kumquats in blender with milk, eggs, melted butter and blend until smooth and creamy. Mix with dry ingredients.
- Bake at 350° for 50 minutes.
