Grilled Eggplant Salad
Tidbits...Summer is over and as you may already know I have been out of the kitchen. Back to reality! This salad is simple to assemble and very light and fresh.
Ingredients
- Eggplant - 2 purple
- Plum tomatoes - 2
- Button Mushrooms - 1 cup
- Fresh Basil Leaves - 1 bunch
- Olive oil - 3 T
- Balsamic Vinegar - to taste
- Sea salt and pepper - to taste
Instructions
- Slice eggplant into paper thin slices and place on hot grill brushed with olive oil and a sprinkle of sea salt. Grill only a couple of minutes per side.
- Grill mushrooms until lightly browned
- Place on platter with a drizzle of olive oil and a dash of balsamic vinegar
- Cut tomatoes lengthwise into very thin slices
- Arrange on platter with a sprig of basil in center.
