Grilled Beets with Honey and Ginger
Tidbits...Beets are truly the most "forgotten" and unappreciated vegetable. Beets are high in iron and potassium and contain folic acid. They are low calorie, too. What could be the most important "beet fact" is that they were considered by the antique romans as an aphrodisiac. Try them, you might just like them!
Ingredients
- Pre-cooked beets - 2 sliced in 1/4 inch rounds
- Zucchini - 2 medium (matchstick sliced)
- Carrot - 1 medium (matchstick sliced)
- Extra virgin olive oil - 1 T
- Ginger root - 2 T grated
- Honey - 1/4 cup
Instructions
- Cut beets in 1/4 inch thick rounds, cut zucchini and carrots in matchstick pieces.
- In saute pan cook zucchini and carrots in olive oil until tender. Add grated fresh ginger , salt and pepper to taste.
- On hot grill brushed with olive oil, grill beets briefly on each side. Brush with honey and grill another 2 minutes per side.
- Serve each beet “bed” with a heaping teaspoon of the zucchini, carrot mixture on top.
