Crispy Cheese Bowls
Tidbits...These cheese bowls are elegant and versatile. I use them filled with dense soups, all types of raw salads or cooked greens. They can be made hours in advance and set aside to be filled just before serving.
Ingredients
- Montasio cheese - 5 loosely packed cups of grated cheese
Instructions
- In 4 – 5 inch nonstick skillet turn heat on medium. Do not add any oil or spray.
- Test heat. When a shred of the cheese sizzles in a couple of seconds after it hits the pan it is hot enough.
- Scatter 1/2 cup cheese over the bottom of skillet. The cheese will release oil as it cooks. After about 3 minutes, shake the pan to loosen. If it sticks, gently loosen with a heatproof rubber spatula.
- Do not disturb and let cook 6 or 7 minutes then carefully flip like a pancake and briefly cook other side.
- Remove carefully and drape over an upside down glass. Lightly press with a kitchen towel while it is still hot, to form a small bowl. Set aside on paper towels.
- Between each cheese cup, drain off any melted oil in pan.
