Couscous with Red Pepper Tofu
Tidbits...Cous cous is the ultimate one plate meal. It is healthy and takes very little time to cook.
Ingredients
- Couscous integrale - 1 cup instant pre-cooked
- Vegetable Broth - 2 cups
- Filet of Tofu - 160 g
- Roasted red bell pepper - 2 diced
- Tofu - 1 block (cubed)
- Olive oil - 2 T
- Zucchini - 1 diced
- Button mushrooms - 1 cup whole
Instructions
- Cook couscous according to package direction. In nonstick pan heat couscous until warmed, then add hot broth, cover for 5 minutes. Then separate with fork.
- Sauté peppers, zucchini and mushrooms on high for 6- 8 minutes. Grill tofu 5 minutes per side on high.
