Coffee Bean Cookies
Tidbits..."Caffè"with my morning coffee. This should get me off to a great start!
Ingredients
- Espresso Coffee - 1 Tbsp. ground espresso
- Espresso Coffee - I brewed espresso cup
- Cake flour - 1 cup
- Dark cocoa powder - 2 Tbsp.
- Cornstarch - 45 g
- Butter - 75 g softened
- Powdered sugar - 70 g
- Egg yolk - 1 (from large egg)
Instructions
- Mix powdered coffee and cup of espresso until dissolved.
- Sift cornstarch and cocoa powder.
- Place softened butter in another bowl and whisk until creamy. Add powdered sugar then egg yk and mix until pale and creamy.
- Pour coffee mixture into butter mixture.
- Sift dry ingredients into wet until it forms coarse crumbs and mix well until smooth.
- Roll into long log and cut into 1/2 inch cubes (about 8 grams) 1 tsp. each then roll into oval shape and press a slit in the center of each "bean" with the back of a knife or shish-ka-bob stick.
- Place on parchment and refrigerate for at least 1 hour.
- Bake in pre-heated 325˚F oven for 12-14 minutes.
