Calascioni Ciociaria
Tidbits...Calascioni are 'no yeast' pocket rolls filled with salami and cheese that are a traditional recipe from Ciociaria. I made and baked them in less than an hour.
Ingredients
- Flour - 200 g
- Eggs - 2
- Extra Virgin Olive Oil - 1 Tbl.
- Salt - Pinch
- Filling
- Parmesan cheese - 50 g grated
- Pecorino Romano - 100 g grated
- Egg - 1 large
- Salami - 6 slices chopped in small pieces
- Pepper - Abundant (1-2) tsp.
- Egg yolk - 1 diluted with tsp. Water
Instructions
For the dough, mix eggs.flour and oil until well blended
Form a ball and let rest 15 minutes.
Meanwhile make filling with grated cheese, salami, eggs and pepper.
Cut off pieces of dough and roll thin.
Cut circular shapes with cookie cutter and brush with water to dampen.
Put a tsp. of filling in center, fold over into half moons and seal edges with a fork Brush tops with diluted egg yolk and bake on parchment lined sheet at 375˚F. for 15 minutes or until golden.
