Basmati Brown Rice with Wild Long Grain and Button Mushrooms
Tidbits... This aromatic basmati brown and wild rice serves 12 - 15. It is good also for a buffet because the grains separate well and can even be served at room temperature.
Ingredients
- Basmati Rice - 500 g.
- Long Grain Wild Rice - 100g.
- Mushrooms - 1 cup button mushrooms
- Parmesan Cheese - 1 cup grated
- Broth - 6 cups
Instructions
- Pre-Soak long grain wild rice 2 hours. Drain then cook in 2 cups of broth. Set aside.
- Boil broth (At least 6 cups) and if you start to run out before rice is finished add boiling water to extend the amount of liquid
- Saute raw basmati rice with mushrooms in 2 Tbl. olive oil on high for 3 -5 minutes until well coated
- Add broth up to 1 inch above rice. Cover and lower heat. Keep adding ladles of broth as absorbed.
- When tender but not mushy, remove from heat and stir in wild rice and grated parmesan. Add another ladle of hot broth and cover for 10 minutes.
- Serve hot with another grating of cheese overtop.
