Boiled Potatoes with Arugula Pesto
Tidbits...There is nothing more basic than a dish of potatoes. With this pesto and cherry tomatoes this dish is anything but "basic". It can also be a delicious and colorful addition to a buffet table.
Ingredients
- Potatoes - 8 new small
- Olive oil - 1T
- Cherry Tomatoes - 8
- Pesto Arugula and Almond - 1 cup
Instructions
- Boil peeled , halved potatoes in lightly salted water. Remove from heat and drain while still firm but tender.
- Saute cherry tomatoes in a tablespoon of olive oil for 5 minutes on high.
- Cover bottom of dish with a thin layer of pesto.
- Arrange with a large dollop of pesto in center of each.
