Boiled Potatoes with Arugula Pesto
Nothing is more "basic" than a dish of potatoes. Potatoes with arugola almond pesto and cherry tomatoes is anything but "basic" and very easy to make. They are also a very good addition on a buffet table.
Ingredients
- Potatoes - 8 new small
- Cherry Tomatoes - 8
- Olive oil - 1 T.
- Kosher Salt - Pinch
- Arugola Almond Pesto - 1 Cup
Instructions
- Boil peeled , halved potatoes in lightly salted water. Remove from heat and drain while still firm but tender.
- Saute cherry tomatoes in 1 Tbl. olive oil on high for 5 minutes with a pinch of kosher salt.
- Cover bottom of dish with a thin layer of pesto. (click for recipe)
- Arrange with a large dollop of pesto in center of each.
