Blonde Meatballs on Skewers
Tidbits...These savory meatballs in a creamy white sauce are hard to resist.
Ingredients
- Veal or Turkey ground - 1 lb.
- Bread crumbs - 1/2 cup
- Egg - 1
- Grated parmesan - 1/2 cup
- Parsley - 1 T chopped
- Flour - 1 T
- Heavy cream - 1/2 cup
- Bacon - 2 slices chopped
- Salt - 1/2 tsp.
Instructions
- Mix first six ingredients well.
- Form small egg shaped balls. Put 2 or 3 balls on skewers and saute on low heat in large non-stick fry pan. Use 1 Tbl. butter or a drizzle of good quality olive oil. Every few minutes jiggle pan to keep from sticking.
- Cook over medium heat until lightly browned and well done but not dry. (about 15 minutes)
- Remove from pan and set aside then drain and discard any remaining oil or butter. Using the same pan, turn up heat to med./high and quickly cook 1 or 2 pieces of chopped bacon until crisp. Drain off any excess grease.
- Add cream and flour and keep heat on med/high constantly stirring. Add meatballs to sauce and continue stirring for about 5 minutes until hot and well coated. Grate parmesan over top. Serve immediately. If you need to save and reheat later, add one or two tablespoons of water to dilute sauce and grate parmesan over tops just before serving.
