- Walnuts - 1/2 cup finely chopped (optional)
Instructions
- Soak saffron threads in a warm water bath for 1 -2 hours.
- Cook pasta in lightly salted boiling water. Drain and reserve 1 cup of cooking liquid.
- Stir ricotta, cream, and egg yolk until well blended, add saffron.
- Stir into hot pasta. Stir in ground nuts and grate fresh nutmeg overtop. The sauce should be moist but not soupy. Use some of reserved cooking liquid if needed.
