Trofie Pesto Genovese
Tidbits...This is a traditional Ligurian recipe with trofie pasta and pesto genovese. The new potatoes and fresh slender green beans join with the pasta and all cook in the same pot. Fresh pesto genovese blends it all together in this flavorful dish from Genoa.
Ingredients
- Trofie pasta - 250 g
- Pesto genovese - 1 cup
- Potato - 1 large yellow, peeled and cubed in small pieces
- Green beans - 150 g cut in short diagonal pieces
- Parmesan - 20 gcup freshly grated
- Pecorino - 20 g
Instructions
- Peel potatoes and cut in small chunks.
- Wash green beans, trim off ends and cut in pieces.
- Cook potatoes, green beans and Trofie pasta all together in abundant lightly salted water according to Trofie package directions. Drain al dente and reserve 1 cup of cooking liquid.
- Toss pasta, potatoes and green beans with pesto sauce. Add a bit of cooking liquid and grate fresh parmesan cheese overtop.
