Pumpkin Custard Fantasy
Tidbits...What would Thanksgiving be without pumpkin pie? The combination of spices with pumpkin are a very unique taste. This pie is made from scratch with fresh cubed pumpkin and yogurt.
Ingredients
- Fresh pumpkin - 500 g cooked, cubed
- Eggs - 2 large
- Yogurt (vanilla) - 1 small yogurt cup
- Milk or milk/cream mix - 1/2 cup
- Cinnamon - 1 tsp.
- Allspice - 1/2 tsp.
- Cloves - 1/2 tsp.
- Ginger - 1/2 tsp.
- Nutmeg - 1/2
- Pie Crust - 1
- Puff pastry sheet - 1 for decorations
Instructions
- Steam cubed pumpkin in 2 Tbl. water, let cool and purèe
- Add eggs, yogurt and cream then spices. Pour into pie crust.
- Bake at 425˚ for 15 min. then lower to 350˚ for an additional 50 minutes .
- Bake decorations separately until golden. Place over pie when cooled.
