Horseshoe Cookies
Tidbits...These are crispy, light cookies that preserve well in a dry tin. They are great for the "Derby" horselovers or anyone who just wants a horseshoe for good luck!
Ingredients
- Flour - 400 g
- Fecola (potato flour) - 1 1/4 cup
- Powdered sugar - 1 1/2 cups
- Butter softened - 150 g
- Eggs - 2
- Baking powder - 1 T
- Vanilla - 1 tsp.
- Dark chocolate bar - 150 g
Instructions
- Cut butter into dry ingredients until it is well blended, then add eggs and vanilla and mix well until smooth.
- Roll into a log and let rest and refrigerate for 30 minutes before making horseshoes.
- Pinch off small pieces then roll each piece into a 6 - 8 inch pencil shape. Curve and place on baking sheet.
- Melt chocolate in microwave or double boiler.
- Let horseshoes cool then dip tips in melted chocolate. Let rest until chocolate hardens.
