Cranberry Blueberry StarTarts with Almond Crust
Tidbits...Red cranberries, blueberries and white powdered sugar. Perfect for the 4th of July!
Ingredients
- Blueberry jam - 1 cup
- Cranberry, strawberry or raspberry jam - 1 cup
- Powdered sugar - for tops
- Almond crust
- Flour - 300 g
- Butter - 250 g
- Sugar - 250 g
- Almonds - 100 g
- Eggs - 2 large
- Cinnamon - 1 tsp.
- Cloves - 1 tsp.
- Lemon - 1 (grated rind)
- Yeast - 1 tsp. dry
Instructions
Mix all ingredients until well blended. Knead briefly and form a solid compact ball.
Cover with saran and let rest in refrigerator for 1 hour.
Roll out dough about 1/4 inch thick.
With round cookie cutter cut disks about 5 inches diameter or put disk in tart cup.
Cut out an equal amount of stars the same size.
Crimp edges of disks so jam mixture doesn't ooze out as they bake.Put about 1 tsp. of jam in center of each one.
Put star on top. Bake at 400˚ for about 15 minutes until golden.
Cool and sprinkle powdered sugar generously overtop.
