4th of July Flag Cake
Tidbits...July 4th is a very special holiday and this is a very special cake. It is rich, moist and has a delicious fresh strawberry filling between layers.
Ingredients
- Flour - 3 cups
- Baking powder - 1 tsp.
- Eggs - 6
- Sugar - 1 1/4 cups
- Butter softened - 1 cup
- Lemon - 1 juice and zest
- Yogurt - 1 cup natural
- Whipped cream - 500 ml
- Strawberries - 1 cup
- Blueberries - 1 cup
- Strawberry sauce - 1 cup sliced, 1 T sugar, squeeze of 1 lemon
Instructions
- Pre-heat oven to 350˚
- Butter and flour 1 loaf cake pan
- Sift dry ingredients
- Separate eggs and beat whites when soft peaks form then add 1/4 cup sugar and continue until glossy.
- Cream butter with sugar then add yolks, lemon zest and lemon juice. Add flour then fold in whites.
- Bake for 50 minutes .
- When cool slice off top half of cake and carefully turn out onto towel or parchment.
- Spread strawberry mixture over 1/2 then put cake back together sandwich style.
- Frost cooled cake with freshly whipped cream.
- Decorate with fresh blueberries for stars and strawberry slices for stripes. Refrigerate until served.
