Cornbread Bowl with Celery Leek Mousse
Tidbits... This appetizer can be used with any type of crusty bread loaf. I used cornbread for my Thanksgiving menu.
Ingredients
- Cornbread - 1kg
- Celery - 2 cups chopped
- Leeks (white part only) - 1 cup thinly sliced white part only
- Butter - 2 Tbl.
- Chives - 2 Tbl.
- Whipped cream - 1 cup
- Nutmeg - 1/2 tsp.
- White pepper - 1 tsp.
- Salt to taste
Instructions
- Scoop out center of bread forming bowl and cut the remainder into small pieces.
- Put celery in lightly salted boiling water for 5 minutes or until tender
- Saute leeks in 2 Tbl. butter until golden
- Puree celery with 1/4 cup of cooking liquid until smooth, add sauteed leeks. freshly ground nutmeg, pepper and adjust for salt
- Whip cream and fold into celery mixture until well blended and fluffy.
- Fill cornbread “bowl” with mousse and sprinkle chives overtop.
- Serve with chopped celery stix and cubes of cornbread.
