Vanilla Pastry Cream (Over Poached Pears)
Tidbits...The pastry cream combined with the poached pears is a sweet treat.
Ingredients
- Egg yolks - 3
- Sugar - 1/4 cup
- Flour - 1/3 cup
- Milk - 1 1/2 cups
- Whipped cream - 1 cup
- Vanilla - 1 tsp.
- Powdered sugar - 1/4 cup
Instructions
- For custard sauce, put yolks and sugar in a saucepan and beat until pale yellow . Add flour gradually 1 Tbl. at a time beating until well combined
- Heat milk until frothy and add to egg flour mixture
- Put over moderate heat stirring constantly without letting it boil until thick and smooth.
- Add vanilla or cognac. Remove from heat.
- Whip cream , gradually adding powdered sugar, until stiff and glossy. Gently fold cream into custard sauce.
