Stuffed Papacelle Peppers
Tidbits...These little jewels can be stuffed with rice, pasta or greens. They are sweet and keep their shape when baked.
Ingredients
- Red Rice - 1 cup
- Red Bell Pepper or Papacelle - 3 or 6 papacelle peppers
- Olive oil - 3 T
- Broth - 2 cups vegetable or chicken broth
- Parsley - 2 T
- Grated parmesan - 2 T
- Bread Crumbs - 2 T
- White Wine - 1 cup (dry)
- Salt and pepper - to taste
Instructions
- Wash and cut top off peppers, carefully clean inside of seeds.
- Cook rice in broth for 20 minutes.
- Butter baking dish and put layer of rice on bottom. Set peppers on top of rice.
- Salt and pepper inside of peppers then stuff with cooked rice.
- Sprinkle bread crumbs over top of each pepper and drizzle olive oil and grated parmesan. Replace lid of pepper.
- Pour white wine and a bit of water in dish so it is somewhat soupy.
- Bake in 375° oven for 30 minutes.
